Tapioca pearls are made from a starch extracted from the root of the cassava plant and brown sugar. During cooking, this ingredient caramelizes and gives the typical black color of tapioca pearls.

Do not wash or rinse the tapioca pearls before cooking. They should be placed directly in boiling water. Wait for the water to boil before adding the tapioca pearls. Do not add them before the water reaches a rolling boil.
